Peanut Butter Date Energy Balls
These date energy balls are my go-to snack when I need a little pick-me-up around 1 pm while working from home. Something sweet, but not so sweet that I crash an hour later. These peanut butter date energy balls are what I make when that happens.
Soft dates do most of the work here. Blended, they turn sticky and caramel-like, so you don’t need any added sugar. A little peanut butter adds richness, coconut and seeds add texture, and a dark chocolate coating gives you that snap when you bite in. They are the kind of snack you make on Sunday and are glad of all week. If you like another no-fuss snack, try my chewy oatmeal bars.
Why You’ll Love These Date Energy Balls
- No baking required – These energy balls come together without turning on the oven, making them especially convenient for quick snacks.
- Naturally sweetened with dates – Soft dates provide natural sweetness and help give the energy balls their deliciously chewy texture.
- Oat-free – Seed mix and coconut give these their texture instead, so they’re a great option if you’re avoiding oats.
- Made with simple ingredients – You only need a handful of everyday ingredients to make these.
- A chocolatey finish – Dipping them in melted chocolate turns a simple snack into something a little more special.
- Great for meal prep – Make a batch ahead of time and keep them in the fridge for an easy grab-and-go snack.
Ingredients You’ll Need
- Soft pitted dates: These are the base and the binder. Look for soft, moist dates. If yours feel firm or dry, soak them in hot water for 10 minutes, then drain well. Substitute: Medjool dates work well, but use slightly fewer as they are larger and juicier.
- Water: Only add this if your mixture is too stiff to come together. Start with 1 tsp.
- Smooth peanut butter: It adds richness and a gentle nutty flavour without overpowering the dates. Substitute: Almond butter or cashew butter.
- Desiccated coconut: It soaks up a little moisture and adds a chewy texture. Substitute: Ground flaxseed or oats.
- Seed mix: I use a mix of pumpkin and sunflower seeds as well as black and white sesame seeds. They add crunch and a bit of protein.
- Dried cranberries: These add a tart bite that balances the sweet dates. Substitute: Chopped dried cherries or raisins.
- Dark chocolate: This is for dipping. Choose a good-quality bar you would happily eat on its own. Substitute: Milk chocolate if you prefer something sweeter.
How to Make Date Energy Balls
Step 1: Blend the dates. Add the pitted dates to a food processor and blend until they break down into a sticky, thick paste. Stop and scrape down the sides a couple of times. If the mixture looks crumbly and won’t clump, add 1 tsp of water and blend again. Add the second teaspoon only if you need it.
Step 2: Mix in the extras. Add the peanut butter, desiccated coconut, seed mix and chopped cranberries. Mix with a spoon until everything is evenly distributed. The mixture should hold together when you squeeze it.
Step 3: Roll the balls. Scoop out a heaped teaspoon at a time and roll between your palms into balls. If the mixture sticks to your hands, dampen them slightly with water. Place the balls on a tray lined or container and chill for about 45 minutes. This makes them firmer and easier to dip.
Step 4: Melt, Dip and Refrigerate. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth, or microwave it in 20-second bursts, stirring between each. Let it cool for a minute. Dip each ball, turn to coat, then lift out with a fork and tap off the excess chocolate. Return to a lined tray and sprinkle straight away with desiccated coconut, chopped peanuts or any topping you like.
Refrigerate for 1 hour until firm, then they are ready to eat.
Tips for the Best Date Energy Balls
- Use soft dates. This is the biggest factor in the texture. Dry dates give you a crumbly mixture.
- Go easy on the water. Too much and the balls turn sticky and hard to roll.
- Chop the cranberries small. Big pieces make the balls fall apart.
- Cool the chocolate slightly. Chocolate that is too hot melts the dates and slides off.
Can I Make These Ahead of Time?
Yes. You can roll the balls and keep them chilled, undipped, for up to 2 days, then dip them when you need them. That makes them great for gifting or for a party platter. Also, they are great alongside a masala chai for an afternoon break.
How to Store Date Energy Balls?
Fridge: Keep them in an airtight container for up to 1 week. Place baking paper between layers so the chocolate doesn’t stick.
Freezer: Freeze them in a single layer on a tray, then transfer to a freezer-safe container for up to 3 months. Thaw in the fridge for about 30 minutes before eating.
Frequently Asked Questions
Are these vegan? They can be. The dates, peanut butter, coconut, seeds and nuts are all plant-based. Just check that your dark chocolate contains no milk solids.
Are they gluten-free? There are no gluten-containing ingredients in the recipe, but check your chocolate and seed mix labels if you are cooking for someone with coeliac disease.
My mixture is too dry. What do I do? Add water ½ tsp at a time and blend again. Dry dates are usually the cause, so soaking them in hot water for 10 minutes first can help.
My mixture is too sticky. What do I do? Add another tablespoon of desiccated coconut or seeds, or chill the mixture for 15 minutes before rolling.
Can I skip the chocolate? Yes. Roll the balls in extra desiccated coconut or crushed peanuts instead.
