Easy Braised Spinach Recipe
This Easy Braised Spinach Recipe is a quick, healthy side dish made with fresh spinach, onion, garlic, and tomato. - 200 g baby spinach (roughly chopped)
- 1/4 cup vegetable oil
- 1 onion
- 3 dried red chillies
- 1 spig curry leaves
- 5 cloves of garlic
- 1 tomato
- salt to taste
Rinse the spinach thoroughly in water mixed with a little salt to remove any sand or grit. Drain well and set aside.
In a medium pot, heat the oil over medium heat.
Add the chopped onions and cook until soft and translucent, about 3–4 minutes.
Stir in the dried chillies, curry leaves, and garlic. Cook for about 30 seconds until fragrant.
Add the chopped tomato and stir. Partially cover the pot and let it cook for 3–5 minutes, or until the tomato softens and melts.
Add the spinach and stir to combine. Cook for 5 minutes, stirring occasionally, until the spinach wilts and reduces in volume.
Add ½ teaspoon of fine salt (or to taste). Stir well to mix the seasoning evenly.
Continue cooking until most of the water has evaporated and the spinach looks soft and well-braised. Taste and adjust seasoning if needed.
