This creamy chai oatmeal is an easy breakfast made with rolled oats, milk and warming chai spices. Quick to make on the stovetop, it's a cosy and comforting breakfast that's easy to customise with your favourite toppings.

Equipment

Ingredients

  • 1 ½ cups rolled oats
  • 3 cups (750ml) water
  • 1 ½ tsp chai spice mix (to taste)
  • 2 tsp cinnamon
  • 5 tbsp brown sugar (to taste)
  • tsp fine salt
  • 4 cups (1000ml) milk (dairy or plant-based)

Instructions

  • Add the rolled oats and water to a medium saucepan. Place over medium heat and cook for 2–3 minutes, stirring occasionally, until the oats begin to soften and absorb some of the water.
  • Pour in the chai spice mix, cinnamon, sugar, salt and milk. Stir well to combine.
  • Reduce the heat to low and cook for 5–7 minutes, stirring regularly so the oats don’t stick to the bottom of the pan. Continue cooking until the oats are soft and the oatmeal is creamy.
  • If the oatmeal is thicker than you like, stir in a splash of extra milk until it reaches your preferred consistency.
  • Spoon the chai oatmeal into bowls and serve warm. Add your favourite toppings such as sliced banana, chopped nuts, raisins, coconut or an extra drizzle of honey or maple syrup.

Notes

  • Use my homemade chai spice mix or your favourite store-bought chai spice blend.
  • If you don't have chai spice mix, use individual ground spices such as cinnamon, cardamom, ginger and cloves.
  • Add extra milk if the oatmeal becomes too thick.
  • For vegan chai oatmeal, use plant-based milk and maple syrup or brown sugar.
  • Oatmeal thickens as it cools, so add a splash of milk when reheating leftovers.
